The key ingredient is Bolthardy Beetroot which Mark grows at home fresh from seed every year. Mark uses Bolthardy Beetroot because of its reliable harvest. To enhance their flavour even more the Beetroot are peeled & diced and smoked for 12 hours in a cold smoker using oak wood dust.
To complete the product Mark simmers the smoked beetroot in Caster Sugar and Cider vinegar with home grown apples and onions with added flavour from Chinese Five Spice sourced from UK suppliers.
