Oak Smoked Chilli Pepper Jam – FAQs

How hot is it?  A difficult question as we find this varies based on the taste of the recipient.   There is also natural variation in each chilli.  I would describe it as medium hot.  There are approximately 20 Apache Chillies per 380ml Jar and they typically rate 70,000 to 80,000 on the Scoville scale.  For comparison purposes a Scotch Bonnet Chilli typically rates at 100,000 to 350,000 and a Tabasco Chilli rates at 30,000 to 50,000.

What do I use it for?  The Jam works really well as an accompaniment to cheese, especially a strong cheddar.

It also works well as coating for meats and fish, especially prawns or chicken wings or mixed with mayonnaise as an accompanying dip.

It will add a smoky, spicy, fruity flavour to anything it has been successfully added to chilli & stews, homemade burgers & sausage rolls and cocktails (especially a Bloody Mary).

How & How Long can I store it? The Jam can be stored in the cupboard until the best Before date.  Once opened it should be kept in the fridge and used within 6 weeks for the best flavour.

Is it Vegan?  All the ingredients are vegan (even the wax discs, if used, are not made from beeswax).  However, it is not certified vegan as the Jam is hand-made in a multi-use kitchen and, whilst care is taken to minimise the risk of cross contamination, the Jam may contain traces of other ingredients.

Is it Organic?  No.  The Cider Vinegar is certified organic but the other ingredients are not.

Are there any flavourings, preservatives or other additives?  No.  Vinegar and Sugar are the natural preservatives.  There are no added flavourings, preservatives or anything else other than Chillies, peppers, cider vinegar and jam sugar.
