Brazilian Cheese Bread – Pao de Queijo

Makes 18 balls

Ingredients:- 

500g of cassava flour, I found mine on Amazon

100ml water

100ml olive oil

100ml milk

A generous pinch of salt

4 large eggs, lightly beaten

400g extra mature cheese, grated
Method:-

 1. Turn the oven to 200c/180c fan or gas mark 6.

 2. Boil together the water, milk, oil and salt (surprisingly the liquids do combine but it will look like a very frothy cappuccino). Place the cassava flour into a large bowl, pour over the boiled mixture and mix with a spoon, leave to cool (otherwise you'll get scrambled eggs at the next stage!)

 3. Add the eggs to the mixture and using your hands combine into the dough, add the cheese and knead firmly, you may need a little water to help bring the dough together. The dough should be soft and a little sticky.

 4. Grease your hands with oil to help with rolling the bread, form into palm size balls. Place on a tray and bake for 20 minutes.

 5. Enjoy with a black coffee, Brazilian style!
