Makes 10 small truffles
Ingredients: - 30g roasted cacao nibs (I used Food Thoughts) 50g almond butter (I used Meridian, you could use peanut or cashew butter too) Salt Icing sugar for dusting
Method: - 1. Place the cacao nibs, butter and a couple of grinds of salt into a blender and blend until the mixture comes together and is glossy. 2. Using your hands divide the mixture into 10 evenly sized portions. Roll in your hands until they form a ball. 3. Dust with icing sugar to serve. These truffles have a nutty texture and are quite bitter, great with a coffee after a meal.
